Home Baked South African Cheesecake











CRUST


  • 1 Packet crushed tennis biscuits ( Substitute with Graham crackers in USA)

  • 100g melted butter


1) Blend butter into crushed biscuits and press into Le Creuset Stoneware or a large spring form baking tin

2) Put in freezer while mixing the filling



FILLING



  • 500 gr smooth cottage cheese or cream cheese

  • 3 Eggs

  • 1 tsp lemon juice

  • 1/2 cup sugar

  • 3 level TBL flour


  • 250 gr soured cream

  • 1/4 cup sugar

  • 1 tsp vanilla essence

1) Beat eggs and sugar and add cottage cheese, lemon juice and flour and beat a little more.

2) Pour mixture into crust and bake for 20 minutes at 180 C

3) Take out of the oven and leave to cool for 15 mins

Turn Oven up to 220 C

4) Mix together soured cream and sugar and vanilla

5) After 15 mins spread mixture onto cream cheese filling

6) Bake for further 10-15 minutes turn oven off and allow to cool in oven with door slightly open.


Decorate with berries of your choice
